I made this for my wife last night and I and I have just one word – YUMMY! I forgot to take a picture, but the next time I make it, I’ll take a photo and put it here.
This is a very filling chicken dish that, depending on the salsa and cheese you use, only runs you about 300 -400 calories. It’s so easy to make, a man can do it. I know because I did. It only takes about 30 minutes in the oven and all you have to do is choose your veggies to go with it and you have a quick, filling, healthy, low-calorie dinner.
Ingredients:
- 4 skinless, boneless chicken breast halves
- 1 package taco seasoning mix
- 1 cup salsa
- 1 cup shredded cheddar cheese
- lite sour cream (optional)
Directions:
- Preheat oven to 375 degrees.
- Use a light cooking spray in a 9×13 inch baking dish.
- Place chicken breasts in baking dish.
- Sprinkle taco seasoning on both sides of the chicken breasts.
- Pour salsa over the chicken breasts to cover.
- Bake at 375 for about 30 minutes or until chicken is done and juices run clear.
- Sprinkle chicken evenly with cheese.
- Return to oven for another 4 minutes or until cheese is melted.
- Serve. (top with sour cream if desired)
