Salsa Chicken

I made this for my wife last night and I and I have just one word – YUMMY!  I forgot to take a picture, but the next time I make it, I’ll take a photo and put it here.

This is a very filling chicken dish that, depending on the salsa and cheese you use, only runs you about 300 -400 calories.  It’s so easy to make, a man can do it.  I know because I did.  It only takes about 30 minutes in the oven and all you have to do is choose your veggies to go with it and you have a quick, filling, healthy, low-calorie dinner.

Ingredients:

  • 4 skinless, boneless chicken breast halves
  • 1 package taco seasoning mix
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • lite sour cream (optional)

Directions:

  1. Preheat oven to 375 degrees.
  2. Use a light cooking spray in a 9×13 inch baking dish.
  3. Place chicken breasts in baking dish.
  4. Sprinkle taco seasoning on both sides of the chicken breasts.
  5. Pour salsa over the chicken breasts to cover.
  6. Bake at 375 for about 30 minutes or until chicken is done and juices run clear.
  7. Sprinkle chicken evenly with cheese.
  8. Return to oven for another 4 minutes or until cheese is melted.
  9. Serve.  (top with sour cream if desired)
