I tried a new recipe last night – taco casserole. It was pretty yummy. It’s not low in calories (about 600+ per serving), but since it’s Freeday Friday, I don’t have to worry about calories today. Feeds 4 easily.
- 1 pound ground beef
- 1 packet (1.25oz) taco seasoning
- 1 10oz can of condensed cheddar cheese soup
- 1 140z can diced tomatos with the juice
- 1/2 cup milk
- 1/2 bag tortilla chips
- Brown ground beef
- Add Taco Seasoning and stir in
- Stir in other ingredients, including chips
- Mix well making sure all the chips are covered
- Put into a baking dish and cover.
- Bake at 400 degrees 15-20 minutes until bubbly.
Serve with salsa, guacamole, veggies, or whatever. It might make a good tortilla filling.
